  • 4 cups Frozen Cherries fresh cherries can be used too
  • 1/2 cup Granulated Sugar
  • 2 tablespoons Corn Starch
  • 1/4 cup Corn Syrup
  • 1 teaspoon Almond Extract
  • 1 cup Dark Chocolate Chips adjust based on preference
For the Crust
  • 1 whole Prepared Pie Crust homemade or gluten-free
For the Finish
  • 1 tablespoon Heavy Cream or Half-and-Half non-dairy alternatives work well
  • 2 tablespoons Light Brown Sugar

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, gently combine the frozen cherries, granulated sugar, and corn starch.
  3. Add corn syrup, almond extract, and dark chocolate chips to the cherry mixture.
  4. Roll out your prepared pie crust into a circle approximately 12 inches in diameter on a sheet of parchment paper.
  5. Carefully place the cherry filling in the center of the crust, leaving a 2-inch border around the edges. Fold the crust over the filling.
  6. Brush a layer of heavy cream or half-and-half over the visible crust edges. Sprinkle with light brown sugar.
  7. Transfer the galette to a baking sheet and bake for 25–30 minutes.
  8. Allow the galette to cool on a wire rack for at least 15 minutes.
