Step-by-Step Instructions for Zucchini Pizza Casserole
  1. Preheat your oven to 400°F (200°C).
  2. Grate the zucchini into a bowl and sprinkle it lightly with salt. Let it sit for about 10 minutes.
  3. Drain the zucchini using a kitchen towel to remove excess moisture.
  4. In a bowl, combine zucchini, eggs, Parmesan cheese, and half of the mozzarella cheese.
  5. Press the mixture into a greased 9x13-inch baking dish to form a crust.
  6. Bake the crust for 20 minutes or until golden.
  7. While the crust bakes, brown the ground beef and onion in a skillet over medium heat.
  8. Add pizza sauce, bell pepper, mushrooms, and spices to the beef mixture and simmer for 5 minutes.
  9. Spread the meat and vegetable mixture over the baked crust.
  10. Top with remaining mozzarella and cheddar cheese.
  11. Return to the oven and bake for an additional 20 minutes until cheese is melted.
  12. Cool for a few minutes before slicing and serving.
