  • 1/4 cup All-purpose Flour Try almond flour for gluten-free.
  • 2 stalks Green Onions Can be replaced with chives.
  • 2 cloves Garlic Garlic powder is a substitute.
  • 1/2 teaspoon Black Pepper Adjust to your spice preference.
  • 1 teaspoon Dried Italian Seasoning Oregano can be used instead.
  • 1/4 teaspoon Red Pepper Flakes Leave out for a milder flavor.
  • 2 tablespoons Olive Oil/Neutral Oil Avocado oil works for frying.

Method
 

Step-by-Step Instructions
  1. Wash the zucchinis thoroughly, then grate them. Place in a colander, sprinkle with salt, and let sit for 10 minutes.
  2. Wrap the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  3. In a large mixing bowl, combine the squeezed zucchini with beaten eggs, cheeses, breadcrumbs, flour, green onions, garlic, black pepper, seasoning, and red pepper flakes.
  4. Heat oil in a skillet over medium heat. Scoop about 2 tablespoons of the mixture, flatten into patties, and fry for 3-4 minutes on each side.
  5. Transfer cooked patties to a wire rack or paper towel-lined plate to drain excess oil.
  6. Serve hot with a yogurt sauce, lemon wedges, and herbs.
