Ingredients
  

For the Pasta
  • 8 oz Whole Wheat Pasta Feel free to substitute with any pasta shape you love.
For the Veggies
  • 1 cup Cherry/Grape Tomatoes Regular tomatoes can be used as well.
  • 1 medium Red Bell Pepper Can swap for yellow or orange bell peppers.
  • 1 small Red Onion Green onions can be used as an alternative.
  • 1/4 cup Cilantro Parsley can substitute if you prefer.
  • 1 cup Fire-Roasted Corn Frozen corn can easily be used too.
For the Protein
  • 1 can Black Beans Pinto beans can be used for a different taste.
For the Dressing
  • 1 cup Raw Cashews Silken tofu is a nut-free option.
  • 1/4 cup Lime Juice Lemon juice can be used as well.
  • 2 cloves Garlic Fresh garlic is preferred.
  • 2 tbsp Chipotle Peppers in Adobo Sauce Can replace with hot sauce or smoked paprika.
  • 1 tbsp Chili Powder Adjust according to your spice preference.
  • 1 tsp Ground Cumin Can be omitted if you don’t have any.
  • 1 tsp Smoked Paprika Regular paprika can be used for milder flavor.
  • 1 tsp Kosher Salt Adjust according to your taste.
  • 1/2 tsp Black Pepper Freshly ground pepper is recommended.

Step-by-Step Instructions
  1. Begin by bringing a large pot of salted water to a rolling boil over high heat. Add the whole wheat pasta and cook according to the package instructions until al dente, usually around 8-10 minutes. Once perfectly tender, drain the pasta in a colander and rinse under cold water to stop the cooking process. Set the pasta aside in a large mixing bowl to cool slightly.
  2. In a high-speed blender, combine the soaked raw cashews, water, lime juice, fresh garlic, chipotle peppers, chili powder, ground cumin, smoked paprika, and kosher salt. Blend at high speed until the mixture reaches a smooth and creamy consistency, about 1-2 minutes. Taste and adjust seasoning as needed before setting the dressing aside.
  3. In the same large mixing bowl that holds your cooled pasta, add the halved cherry tomatoes, diced red bell pepper, chopped red onion, chopped cilantro, black beans, and fire-roasted corn. Gently fold these vibrant ingredients together, ensuring even distribution. Then, drizzle the creamy dressing over the mixture, lovingly tossing everything to coat thoroughly.
