For the Brine
  • 2 tablespoons Extra Virgin Olive Oil Regular olive oil as substitute
  • 1 cup Water
  • 1/4 cup Fresh Parsley Or fresh basil/arugula
  • 2 cloves Garlic Grated
  • 1 tablespoon Lemon Zest Fresh zest preferred
  • 2 tablespoons Lemon Juice
  • 1/2 teaspoon Fine Salt
  • 1/4 teaspoon Black Pepper Adjust to taste
For the Toppings
  • 8 ounces Fresh Mozzarella Slice into ½ inch pieces
  • 1/4 cup Grated Parmesan Cheese Omit for vegetarian option
  • to taste Freshly Ground Black Pepper

Method
 

Preparation Steps
  1. Prepare the pizza dough according to the recipe and let it rest.
  2. Preheat your oven to 450°F (230°C).
  3. Slice the mozzarella into ½ inch pieces and let it reach room temperature.
  4. Shape the rested dough into a rectangle on parchment paper, about 9x13 inches.
  5. Combine brine ingredients in a jar, shake well until emulsified.
  6. Create dimples in the dough and drizzle brine over it, then add mozzarella slices.
  7. Transfer pizza to a preheated stone or sheet and bake for 8-10 minutes.
  8. After baking, drizzle with more lemon juice, sprinkle with parmesan, parsley, and enjoy.
