Preparation Steps
  1. In a small mixing bowl, combine yogurt, lemon juice, and a pinch of salt and pepper. Whisk together until smooth and creamy.
  2. Thinly slice half an onion and soak in a bowl of cold water for 10-15 minutes, then drain.
  3. In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente.
  4. Cut cucumbers in half lengthwise, scoop out the seeds, and slice thinly.
  5. In a large bowl, combine cooled pasta, cucumber slices, and drained onions. Add any optional veggies.
  6. Pour the dressing over the pasta mixture and toss gently until well-coated.
