For the Flavor
  • 4 cups Vegetable Broth Substitute with homemade broth or water.
  • 2 tablespoons Tomato Paste Can replace with crushed tomatoes.
  • 2 tablespoons Soy Sauce Tamari is a great gluten-free alternative.
  • 1 teaspoon Thyme Fresh or dried can be used.
  • 1 teaspoon Rosemary Fresh or dried can be used.

Cooking Steps
  1. Heat the olive oil in a large pot over medium-high heat for 1-2 minutes until shimmering.
  2. Sauté the chopped onion and minced garlic for about 5 minutes until translucent.
  3. Add sliced carrots and diced potatoes, cooking for an additional 5 minutes.
  4. Introduce green beans, peas, and diced bell pepper, and mix for 2-3 minutes.
  5. Pour in vegetable broth, stir in tomato paste, soy sauce, thyme, and rosemary.
  6. Bring to a gentle boil, then reduce heat to low and simmer for 30-40 minutes.
  7. Taste and adjust seasoning with salt and pepper before serving.
  8. Ladle the stew into bowls and garnish with fresh parsley.
