Ingredients
  

For the Chicken Marinade
  • 1 pound skinless, boneless chicken thighs or substitute with chicken breasts or tofu
  • 2 tablespoons fish sauce consider low-sodium varieties if preferred
  • 2 tablespoons soy sauce can substitute with tamari for gluten-free
  • 1 tablespoon brown sugar or white sugar or coconut sugar
  • 2 tablespoons vegetable oil any neutral oil; sesame oil adds flavor
  • 1 tablespoon lime juice or fresh lemon juice
For the Nuoc Cham Dressing
  • 1 tablespoon caster sugar or granulated sugar
  • 1 piece red bird's eye chilli adjust based on spice preference
For the Noodle Bowl
  • 8 ounces dried rice vermicelli noodles gluten-free base
  • 1 cup fresh mint leaves or substitute with basil
  • 1 cup fresh coriander leaves omit if cilantro is not preferred
  • 1/2 cup roasted peanuts or toasted cashews, or omit for nut-free

Method
 

Step‑by‑Step Instructions
  1. In a mixing bowl, combine fish sauce, soy sauce, brown sugar, vegetable oil, and lime juice to create the marinade. Add chicken thighs, coat well, cover, and refrigerate for at least 30 minutes.
  2. Prepare the Nuoc Cham dressing by dissolving caster sugar in warm water, then stir in fish sauce, lime juice, minced garlic, and chopped chilli. Adjust taste as needed.
  3. Bring a pot of water to boil, cook the noodles according to package instructions (4-5 minutes), drain, and rinse under cold water. Prepare vegetables by shredding lettuce and julienning carrot and cucumber.
  4. Preheat grill or non-stick pan over medium-high heat. Grill or pan-fry marinated chicken thighs for 8-10 minutes until cooked through. Let rest before slicing.
  5. In bowls, layer shredded lettuce, cooked noodles, julienned vegetables, sliced chicken, and top with peanuts and drizzle with Nuoc Cham dressing.
