For the Dressing
  • 1 medium Avocado Choose slightly ripe to avoid browning.
  • 2 cups Fresh Spinach Frozen spinach works if fresh isn’t available.
  • 1 cup Fresh Herbs Mix basil and dill or use your personal favorites.
  • 3 tbsp White Wine Vinegar Can swap with apple cider or rice vinegar.
  • 3-4 cloves Garlic Infuse aromatic flavor; adjust to taste.
  • 1/4 cup Nutritional Yeast Replace with vegan parmesan or omit if needed.
For the Add-ins
  • 1/2 cup Green Onions Shallots are a great alternative.

Method
 

Cooking Instructions
  1. Start by boiling a large pot of salted water over high heat. Once boiling, add your choice of pasta and cook according to package instructions, typically around 8-10 minutes until al dente. Drain the pasta and return it to the pot.
  2. To prevent the pasta from sticking together, drizzle in a bit of olive oil and toss gently. Add a few ice cubes into the pot with the warm pasta—this will help cool it down quickly.
  3. In a blender, combine the ripe avocado, fresh spinach, herbs, white wine vinegar, garlic, and nutritional yeast. Blend on high speed until smooth and creamy, about 30-60 seconds.
  4. With the pasta still in the pot, pour the creamy green goddess dressing over it. Add in chopped green onions and any additional vegetables or chickpeas you'd like to include. Gently toss everything together until well coated.
  5. Transfer the Green Goddess Pasta Salad to a serving bowl. Garnish with more sliced green onions or a sprinkle of additional herbs on top. Serve immediately while fresh.
