Ingredients
  

For the Wraps
  • 4 pieces Whole Wheat Tortillas or gluten-free wraps
  • 2 cups Bell Peppers mixed colors
  • 1 medium Red Onion soaked if preferred milder
  • 1 medium Zucchini yellow squash can be substituted
  • 1 cup Corn canned or frozen
  • 1 can Black Beans rinsed and drained
  • 1 medium Avocado or substitute with hummus
  • 1/4 cup Fresh Cilantro or parsley for milder taste
For the Dressing
  • 2 tablespoons Lime Juice or lemon juice
  • 1 tablespoon Olive Oil or avocado oil
  • 1 teaspoon Cumin or smoked paprika for a deeper flavor
  • 1 teaspoon Chili Powder to taste
For Serving
  • 2 cups Greens fresh spinach or arugula
  • 1 cup Salsa or pico de gallo

Method
 

Preparation
  1. Wash and chop bell peppers, red onion, and zucchini into bite-sized pieces. Rinse black beans and gather all ingredients.
  2. In a large skillet over medium heat, drizzle olive oil. Add red onion and cook until translucent.
  3. Add bell peppers, zucchini, and corn. Sauté until vegetables are tender and caramelized.
  4. Sprinkle with cumin, chili powder, and salt. Stir well and cook for another 1-2 minutes.
  5. Lay each tortilla flat and layer greens, sautéed vegetables, black beans, and avocado. Top with cilantro.
  6. Roll each tortilla tightly starting from the edge closest to you, tucking in the sides.
  7. Slice wraps diagonally and serve with salsa.
