Ingredients
  

Tofu Spread
  • 1 block Extra firm tofu Press softer tofu for 15 minutes
  • 1/2 cup Cashews Soaked for 15 minutes
  • 1 tbsp Lemon (juice and zest) Fresh juice and zest for brightness
Marinated Tomatoes
  • 2 large Heirloom tomatoes Thickly sliced
  • 1 medium Red onion Finely sliced
  • 1 tbsp Sumac Adds zest; substitute with lemon zest if needed
  • 1/4 cup Fresh herbs (parsley & basil) Enhance flavor
Assembly
  • 4 slices Hearty bread Sourdough or sprouted whole wheat
  • 1 whole Avocado Optional for creaminess
  • 1 cup Lettuce Optional for crunch

Method
 

Preparation
  1. Soak cashews in boiling water for 15 minutes. Drain and blend with tofu, lemon juice, and zest until smooth. Refrigerate for 30 minutes.
  2. Slice the red onions, drizzle with olive oil, vinegar, lemon juice, sumac, and salt. Toss and marinate for 10-15 minutes.
  3. Slice heirloom tomatoes and drizzle with remaining marinade ingredients. Let sit for 5-10 minutes, turning occasionally.
  4. Spread tofu mixture on one slice of bread, layer with marinated tomatoes, sumac onions, and lettuce. Top with another slice of bread spread with tofu mixture.
  5. Slice the sandwich in half and serve immediately, optionally with chips or salad.
