Ingredients
  

For the Veggies
  • 2 medium Zucchini Trim and slice thin lengthwise
  • 4 cups Fresh Spinach Fresh is preferred
  • 2 cloves Garlic Minced
  • ½ cup Fresh Basil Chopped
  • ¼ cup Fresh Parsley Chopped
  • ½ teaspoon Crushed Red Pepper Adjust based on spice preference
For the Cheesy Mixture
  • 15 oz Ricotta Cheese Can substitute with vegan ricotta
  • ½ cup Parmesan Cheese Choose a vegetarian option
  • 1 large Egg Omit or substitute for vegan version
  • 2 cups Part-Skim Mozzarella Save some for topping
For Assembly
  • 2 cups Marinara Sauce Opt for a sugar-free variety
  • 9 sheets Lasagna Noodles (Gluten-Free) Cook according to package instructions

Method
 

Step 1: Prepare the Vegetables
  1. Heat a tablespoon of olive oil in a large skillet over medium heat. Season zucchini with salt and pepper, sauté for 8 to 10 minutes until tender and lightly browned. Remove zucchini, add spinach and cook until wilted. Set vegetables aside.
Step 2: Make the Cheese Mixture
  1. In a mixing bowl, combine ricotta, Parmesan, beaten egg, and minced garlic. Add wilted spinach, basil, and parsley. Season with salt and pepper.
Step 3: Assemble the Lasagna
  1. Preheat oven to 350°F. Spray a casserole dish with cooking spray. Spread ½ cup of marinara sauce on the bottom, layer lasagna noodles, half of zucchini, half cheese mixture, a sprinkle of mozzarella, repeat layers, finishing with more noodles and marinara, and top with remaining mozzarella.
Step 4: Bake the Lasagna
  1. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until golden. Let cool for 15 minutes before serving.
