- Preheat the oven to 350°F (175°C) and grease a baking dish.
- Cook the jumbo pasta shells in boiling salted water for 8-9 minutes until al dente, then drain and cool.
- Combine chopped turkey, mashed potatoes, onion, celery, and garlic in a mixing bowl. Add half of the cheddar cheese and season with salt and pepper.
- Spread 3/4 cup of gravy in the bottom of the baking dish and fill each pasta shell with the turkey mixture.
- Top with remaining stuffing, drizzle with gravy, and sprinkle with the rest of the cheddar cheese.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
