For the Filling
  • 2 cups turkey use leftover turkey, chicken can be substituted
  • 1 cup mashed potatoes homemade or store-bought
  • 1 Tbsp celery diced, consider green onions as substitute
  • 2 Tbsp yellow onion diced, leeks can also be used
  • 1 clove garlic minced, fresh garlic preferred
  • 3 oz cheddar cheese shredded and divided
For Assembling
  • 1.25 cups gravy homemade is best but jarred works too
  • 1 cup bread stuffing any leftover stuffing works
  • salt to taste
  • pepper to taste

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. Cook the jumbo pasta shells in boiling salted water for 8-9 minutes until al dente, then drain and cool.
  3. Combine chopped turkey, mashed potatoes, onion, celery, and garlic in a mixing bowl. Add half of the cheddar cheese and season with salt and pepper.
  4. Spread 3/4 cup of gravy in the bottom of the baking dish and fill each pasta shell with the turkey mixture.
  5. Top with remaining stuffing, drizzle with gravy, and sprinkle with the rest of the cheddar cheese.
  6. Bake for 25-30 minutes until the cheese is melted and bubbly.
