  2. In a medium saucepan over medium heat, combine the mashed blueberries, 1 cup of strong brewed coffee, ¾ cup of granulated sugar, and 1 tablespoon of lemon juice.
  3. Bring the mixture to a gentle simmer, stirring continuously for about 5 minutes.
  4. Allow the syrup to cook for 10–12 minutes until thickened and reduced.
  5. For a thicker syrup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the saucepan, cooking for an additional 2-3 minutes.
  6. Check the syrup's texture; it should coat the back of a spoon well.
  7. Remove from heat and stir in 1 teaspoon of vanilla extract and a pinch of salt.
  8. Once cooled, transfer the syrup into a clean jar or airtight container.
