Step-by-Step Instructions
  1. Start by cutting boneless chicken thighs or breasts into bite-sized pieces. Season with a sprinkle of salt.
  2. In a wok or large skillet, heat 2 tablespoons of oil over medium-high heat. Add chicken pieces and sauté for about 5–7 minutes.
  3. Toss in the sliced bell peppers and Thai chilies, stir-fry for another 2–3 minutes.
  4. Pour in the coconut milk and fish sauce, stir well and simmer for 10–15 minutes.
  5. Prepare jasmine rice according to package instructions.
  6. Remove curry from heat, spoon over jasmine rice, and garnish with fresh herbs.
