Preparation Steps
  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy—about 3-5 minutes.
  2. Add in the eggs one at a time, mixing well after each addition, then add the vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined, forming a thick dough.
  5. Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes, or up to 2 hours.
  6. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop tablespoon-sized balls of dough and roll them in the cinnamon-sugar mixture, then arrange them on the prepared sheets.
  8. Bake for 10-12 minutes, until the edges are set and centers look slightly soft.
  9. Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
