Preparation Steps
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy—about 3-5 minutes.
- Add in the eggs one at a time, mixing well after each addition, then add the vanilla extract.
- In a separate bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined, forming a thick dough.
- Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes, or up to 2 hours.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop tablespoon-sized balls of dough and roll them in the cinnamon-sugar mixture, then arrange them on the prepared sheets.
- Bake for 10-12 minutes, until the edges are set and centers look slightly soft.
- Allow cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes
For best results, do not skip chilling the dough to prevent flat cookies and ensure accurate measuring for flour to keep cookies moist and chewy.
