Dry Ingredients
  • 2 cups All-Purpose Flour can substitute whole wheat or gluten-free flour
  • 2 teaspoons Baking Powder ensure it is fresh
  • 1 teaspoon Baking Soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Cinnamon ground
  • 0.5 teaspoon Nutmeg
Wet Ingredients
  • 0.5 cup Coconut Oil can substitute with vegetable or canola oil
  • 0.5 cup Granulated Sugar can replace with honey or maple syrup
  • 0.5 cup Brown Sugar
  • 2 large Eggs can substitute with flaxseed meal for a vegan version
  • 2 teaspoons Vanilla Extract optional
Mix-Ins
  • 1.5 cups Shredded Zucchini do not wring out
  • 1 cup Shredded Carrot
  • 0.5 cup Chopped Walnuts can be omitted
  • 0.5 cup Dried Cranberries substitute with raisins or chocolate chips
  • Zest of 1 Orange can use lemon zest for a different flavor

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line the loaf pan with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, cream together the coconut oil, granulated sugar, and brown sugar until smooth. Add eggs and vanilla extract and mix well.
  4. Gradually fold the dry mixture into the wet ingredients without overmixing until just combined.
  5. Fold in the shredded zucchini, shredded carrot, walnuts, cranberries, and orange zest.
  6. Transfer the batter to the prepared loaf pan and smooth the top.
  7. Bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
  8. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
