- In a large mixing bowl, dissolve the active sourdough starter into 1 cup of room temperature filtered water.
- Add 3 cups of bread flour, 2 tablespoons of sugar, 1 teaspoon of salt, and 2 tablespoons of freeze-dried strawberry powder to the bowl. Stir until a shaggy dough forms.
- Gently fold in 1 cup of chopped dried strawberries and 1 cup of white chocolate chips into the dough.
- Cover the bowl with a damp cloth and let the dough rest for 30 minutes.
- Perform a series of stretch and folds every 30 minutes for 2 hours.
- Once the dough has doubled in size, shape it into a loaf and place it in a floured proofing basket. Refrigerate overnight for 12-18 hours.
- Preheat your oven to 450°F (232°C) with a Dutch oven inside for at least 30 minutes.
- Remove the hot Dutch oven, place the dough on parchment, score the top, cover, and bake for 20 minutes.
- After 20 minutes, uncover and bake for an additional 15-20 minutes until golden brown.
- Transfer the bread to a wire rack to cool completely before slicing.
