Step-by-Step Instructions
  1. In a large mixing bowl, dissolve the active sourdough starter into 1 cup of room temperature filtered water.
  2. Add 3 cups of bread flour, 2 tablespoons of sugar, 1 teaspoon of salt, and 2 tablespoons of freeze-dried strawberry powder to the bowl. Stir until a shaggy dough forms.
  3. Gently fold in 1 cup of chopped dried strawberries and 1 cup of white chocolate chips into the dough.
  4. Cover the bowl with a damp cloth and let the dough rest for 30 minutes.
  5. Perform a series of stretch and folds every 30 minutes for 2 hours.
  6. Once the dough has doubled in size, shape it into a loaf and place it in a floured proofing basket. Refrigerate overnight for 12-18 hours.
  7. Preheat your oven to 450°F (232°C) with a Dutch oven inside for at least 30 minutes.
  8. Remove the hot Dutch oven, place the dough on parchment, score the top, cover, and bake for 20 minutes.
  9. After 20 minutes, uncover and bake for an additional 15-20 minutes until golden brown.
  10. Transfer the bread to a wire rack to cool completely before slicing.
