Ingredients

  • 1 cup All-Purpose Flour Can use gluten-free flour
  • 1 3/4 cup Granulated Sugar Brown sugar can be used
  • 1 tsp Baking Powder Ensure freshness
  • 1/2 tsp Salt Can be reduced if necessary
  • 1 tsp Ground Cinnamon Can substitute with other spices
  • 1/4 tsp Ground Nutmeg Can be omitted
  • 1/4 tsp Ground Ginger Fresh ginger is a great alternative
  • 1 large Egg Use a flax egg for vegan option
  • 1/2 cup Water Adjust for batter consistency
For the Apples
  • 2 medium Honeycrisp Apples Granny Smith or Fuji can be substituted
  • 2 tbsp Unsalted Butter A dairy-free alternative can be used
  • 1 tbsp Sugar (for Caramelizing) Maple syrup can be used instead
For the Glaze
  • 1 cup Powdered Sugar Coconut sugar is a healthier option
  • 2 tbsp Oat Milk Any plant-based milk can substitute

Method
 

Mix Batter
  1. In a large mixing bowl, combine your unfed sourdough starter with all-purpose flour, mixing well. Gradually add water until the batter reaches a thick yet pourable consistency. Cover the bowl with a clean towel and let it rest overnight at room temperature.
Prepare Dough
  1. The next day, check the batter, then add baking powder, salt, ground cinnamon, ground nutmeg, ground ginger, granulated sugar, and the egg. Stir until all ingredients are fully combined.
Sauté Apples
  1. In a skillet over medium heat, melt the unsalted butter. Add the chopped Honeycrisp apples, along with a tablespoon of sugar and a sprinkle of cinnamon. Sauté for about 10 minutes, then remove from heat and let cool.
Heat Oil
  1. In a heavy-bottomed pot or deep skillet, pour enough canola oil to cover the fritters by about an inch. Heat the oil to 350°F (175°C) using a thermometer.
Incorporate Apples
  1. Once the apple mixture has cooled, gently fold it into the prepared batter.
Fry Fritters
  1. Using a 1/4 cup measuring cup, drop portions of dough into the hot oil, frying in batches. Cook each fritter for about 2 minutes on one side, then flip and fry for another 2 minutes.
Drizzle Glaze
  1. In a small bowl, whisk together powdered sugar and oat milk until smooth. Drizzle this glaze over the tops of the fritters.
