Ingredients
  

For the Dough
  • 1 cup Unfed Sourdough Starter Use active sourdough starter if unfed is unavailable.
  • 3 cups All-Purpose Flour Can substitute with bread flour.
  • 1 cup Water Use room temperature for optimal mixing.
  • 1/2 cup Light Brown Sugar Substitute with granulated sugar if needed.
  • 2 tablespoons Cornstarch Can be left out if unavailable.
  • 2 large Large Eggs
  • 1 cup Whole Milk Substitute with almond or oat milk for dairy-free.
  • 1 teaspoon Salt
  • 1/4 cup Granulated Sugar
  • 1/2 cup Unsalted Butter Soften before mixing; vegan butter can be used.
For the Filling
  • 1 cup Heavy Cream Can use half-and-half for a lighter option.
  • 8 ounces Dark Chocolate (70% cacao) Choose high-quality for best flavor.
  • 1/4 cup Cocoa Powder
  • 1 teaspoon Vanilla Extract Almond extract can be a substitute.
  • 1/2 cup Walnuts (Optional) Omit for nut-free.
For the Syrup
  • 1/4 cup Granulated Sugar (for syrup)
  • 1/4 cup Water (for syrup) Can use flavored liquids like coffee.

Method
 

Preparation Steps
  1. In a mixing bowl, combine your unfed sourdough starter, all-purpose flour, room temperature water, and light brown sugar. Stir until well incorporated. Cover and let it ferment for 6-8 hours.
  2. In the bowl of a stand mixer, combine the prepared sweet starter, additional flour, cornstarch, large eggs, whole milk, salt, and granulated sugar. Mix on low speed, then gradually add softened unsalted butter. Knead for 8-10 minutes.
  3. Transfer the kneaded dough to a greased bowl, cover, and let it rise for 4-6 hours or overnight in the fridge until nearly doubled in size.
  4. Warm the heavy cream in a saucepan, then pour over chopped dark chocolate and let sit. Stir in cocoa powder, sugar, softened butter, vanilla extract, and walnuts. Cool to room temperature.
  5. Roll the risen dough into a rectangle, spread the chocolate filling, roll it into a log, slice in half lengthwise, and twist into a loaf pan.
  6. Cover the loaf pan loosely and let it rise for 2-4 hours until puffy.
  7. Preheat oven to 350°F (175°C). Bake for 35-40 minutes until golden brown. If browning too quickly, cover with foil.
  8. Heat water and granulated sugar in a saucepan to make syrup. Brush over the warm babka after baking. Cool in the pan for 10-15 minutes before transferring to a wire rack.
