Ingredients

Brownie Layer
  • 1/2 cup Butter (melted) Substitute with margarine if desired.
  • 1 cup Granulated Sugar Consider using coconut sugar for a less refined option.
  • 2 large Eggs For a vegan alternative, use flax eggs.
  • 2 teaspoons Vanilla Extract Use pure vanilla extract for best results.
  • 1/2 cup Cocoa Powder Dutch-processed cocoa provides a richer taste.
  • 1/2 cup All-Purpose Flour Gluten-free flour can be used as substitute.
  • 1/2 teaspoon Baking Soda Ensure it's fresh for best effectiveness.
  • 1/4 teaspoon Salt An essential component for both layers.
Cookie Layer
  • 1/2 cup Brown Sugar Can replace with additional granulated sugar.
  • 1 cup Chocolate Chips (optional) Mix in dark chocolate chips for richer flavor.

Equipment

  • Oven
  • mixing bowl
  • Baking pan
  • whisk
  • parchment paper

Method

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line an 8×8 or 9×9-inch baking pan with parchment paper.
  2. In a mixing bowl, whisk together melted butter and granulated sugar until glossy. Add eggs and vanilla extract, mixing until smooth.
  3. Stir in cocoa powder, flour, and salt until just combined. Fold in chocolate chips if desired and pour the brownie batter into the prepared pan.
  4. In a separate bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add egg and vanilla, mixing until incorporated.
  5. Gradually stir in flour, baking soda, and salt until a dough forms. Fold in more chocolate chips and scoop the cookie dough onto the brownie layer.
  6. Bake for 28-35 minutes until edges are set and center is slightly soft; a toothpick should come out with moist crumbs.
  7. Cool completely in the pan on a wire rack. Once cooled, lift out using parchment paper and slice into squares.
