Method
 

Step-by-Step Instructions
  1. Rinse 1 cup of jasmine rice under cold water until the water runs clear. Set aside to drain.
  2. Combine 1.5 cups of coconut milk, ½ cup of water, ½ teaspoon of salt, and 1 tablespoon of sugar in a saucepan. Heat until it begins to bubble.
  3. Add the rinsed rice to the saucepan, stir briefly, cover, and reduce heat to medium-low.
  4. Simmer for 25-30 minutes, avoiding lifting the lid.
  5. Remove from heat, let it rest covered for about 5 minutes.
  6. Fluff the rice with a fork and garnish with coriander before serving.
