Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat over medium heat and add your ground beef. Break it up as it cooks, stirring for about 5-7 minutes until nearly browned.
  3. Add the sofrito, garlic, onion, and green pepper to the skillet. Sauté for an additional 3-5 minutes until the vegetables soften.
  4. Stir in the tomato sauce and water. Cover and let simmer for about 10 minutes.
  5. Peel your ripe plantains and cut them in half lengthwise to create a deep oval shape.
  6. Gently remove some flesh from the center of each plantain half to create a cavity for the filling.
  7. (Optional) Heat oil and fry the plantain halves for 3-4 minutes on each side, or bake them directly for about 20-25 minutes until tender.
  8. Fill each hollowed plantain with the beef mixture and top with mozzarella or American cheese.
  9. Return the filled plantains to the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let sit for a couple of minutes before serving.
