Ingredients
  

Filling
  • 3 tablespoons Butter or olive oil for a lighter option
  • 1 medium Onion can substitute with shallots
  • 2 cloves Garlic use fresh or powdered
  • 2 stalks Celery leeks can be a substitute
  • 1 medium Bell Pepper any color or diced zucchini
  • 2 tablespoons Cajun Seasoning adjust to taste
  • 1 teaspoon Paprika or smoked paprika
  • 1 teaspoon Thyme dried or fresh
  • 1 teaspoon Black Pepper
  • 1 teaspoon Salt sea salt preferred
  • 1/4 cup All-purpose Flour can substitute with cornstarch
  • 2 cups Seafood Stock or Chicken Broth
  • 1 cup Heavy Cream or Half-and-Half, coconut cream for dairy-free
  • 1 cup Frozen Peas or fresh peas, adjust cooking time
  • 1 cup Shrimp can substitute with scallops or firm white fish
  • 1 cup Crab Meat canned or fresh
  • to taste Hot Sauce (optional)
Crust
  • 1 package Puff Pastry thaw before use
  • 1 large Egg for egg wash

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and equipment.
  2. Melt 3 tablespoons of butter in a large skillet over medium heat. Add finely chopped onions, minced garlic, diced celery, and bell peppers. Sauté for about 5 minutes until softened.
  3. Stir in Cajun seasoning, paprika, thyme, black pepper, and salt. Let bloom for about 1 minute.
  4. Sprinkle 1/4 cup of flour over the mixture, stirring gently to coat. Gradually pour in 2 cups of stock or broth while stirring. Mix for about 2-3 minutes until smooth.
  5. Add 1 cup of heavy cream, then fold in 1 cup of frozen peas, 1 cup of shrimp, and 1 cup of crab meat. Simmer for 5-7 minutes until thick.
  6. Transfer filling to a baking dish. Roll out thawed puff pastry over the filling, sealing edges and making vents for steam.
  7. Brush pastry with egg wash and bake for 25-30 minutes until golden brown.
  8. Let cool for 5-10 minutes before serving.
