Preparation
- Preheat your oven to 400°F (200°C). Gather your ingredients and equipment.
- Melt 3 tablespoons of butter in a large skillet over medium heat. Add finely chopped onions, minced garlic, diced celery, and bell peppers. Sauté for about 5 minutes until softened.
- Stir in Cajun seasoning, paprika, thyme, black pepper, and salt. Let bloom for about 1 minute.
- Sprinkle 1/4 cup of flour over the mixture, stirring gently to coat. Gradually pour in 2 cups of stock or broth while stirring. Mix for about 2-3 minutes until smooth.
- Add 1 cup of heavy cream, then fold in 1 cup of frozen peas, 1 cup of shrimp, and 1 cup of crab meat. Simmer for 5-7 minutes until thick.
- Transfer filling to a baking dish. Roll out thawed puff pastry over the filling, sealing edges and making vents for steam.
- Brush pastry with egg wash and bake for 25-30 minutes until golden brown.
- Let cool for 5-10 minutes before serving.
