  1. Begin by combining the chicken thighs in a bowl with soy sauce, oyster sauce, black pepper, and corn starch. Toss well and let it marinate for about 10 minutes.
  2. Heat a splash of vegetable or sesame oil in a non-stick pan over medium heat. Add the marinated chicken, spreading it in a single layer. Cook for 6 to 8 minutes, turning occasionally, until golden brown.
  3. Add chopped white parts of the scallions to the pan. Stir and cover for about 2 minutes to soften them. Then toss in the green parts, cooking for another minute until wilted.
