Ingredients
  

For the Kebabs
  • 1 pound Ground Chicken can swap for turkey or lamb
  • 1 medium Red Onion or shallots
  • 1 medium Red Bell Pepper any color bell pepper works
  • 3 cloves Garlic fresh garlic for best results
  • 1 teaspoon Paprika smoked paprika is a good alternative
  • 1 teaspoon Oregano use fresh oregano if available
  • 1 teaspoon Cumin ground coriander can be an alternative
  • 1/2 teaspoon Crushed Red Pepper Flakes adjust to taste
  • 1 teaspoon Kosher Salt adjust if using sea salt or table salt
  • 1/2 teaspoon Ground Black Pepper freshly ground is preferred
  • 1/4 cup Parsley fresh for brightness
  • 2 tablespoons Tomato Paste or moderation ketchup
  • 4 large Flour Tortillas or corn tortillas for gluten-free
For the Garlic Parsley Butter
  • 1/2 cup Salted Butter or unsalted for more control
  • 1/4 cup Chopped Parsley for garnishing

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a food processor, combine the red onion and bell pepper, pulse until finely minced, then drain excess moisture.
  3. In a mixing bowl, combine minced onion and bell pepper with ground chicken, minced garlic, paprika, oregano, cumin, crushed red pepper flakes, salt, and tomato paste; mix well.
  4. Trim the tortillas into rectangles, spread the chicken mixture evenly, stack and cut into strips; skewer the strips with wooden skewers and arrange them on the baking sheet.
  5. Bake the kebabs in the preheated oven for 15 minutes.
  6. In a small saucepan, melt butter over low heat, stir in minced garlic and chopped parsley to create the garlic parsley butter.
  7. Remove the kebabs after 15 minutes, brush them generously with garlic butter, and return to the oven.
  8. Bake for an additional 20 minutes or until golden brown.
  9. Carefully remove skewers and serve with tzatziki sauce or fresh salad.
