Preparation Steps
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a food processor, combine the red onion and bell pepper, pulse until finely minced, then drain excess moisture.
- In a mixing bowl, combine minced onion and bell pepper with ground chicken, minced garlic, paprika, oregano, cumin, crushed red pepper flakes, salt, and tomato paste; mix well.
- Trim the tortillas into rectangles, spread the chicken mixture evenly, stack and cut into strips; skewer the strips with wooden skewers and arrange them on the baking sheet.
- Bake the kebabs in the preheated oven for 15 minutes.
- In a small saucepan, melt butter over low heat, stir in minced garlic and chopped parsley to create the garlic parsley butter.
- Remove the kebabs after 15 minutes, brush them generously with garlic butter, and return to the oven.
- Bake for an additional 20 minutes or until golden brown.
- Carefully remove skewers and serve with tzatziki sauce or fresh salad.
