- Preheat your oven to 425°F (220°C) and prepare baking sheets by lightly greasing them.
- Combine drained tomatoes, onion, parsley, green pepper, tomato paste, mint, garlic, salt, paprika, cayenne, and black pepper in a large bowl. Mix well, then fold in ground beef.
- Arrange tortillas flat on greased baking sheets, allowing space for crisping.
- Spread about 1/4 cup of the meat mixture onto each tortilla, leaving a 1/2 inch border.
- Bake in the preheated oven for 9-12 minutes until meat is cooked and tortillas are golden brown.
- Remove from oven, allow to cool slightly, slice, and serve warm.
