  • 1 teaspoon black pepper Tailor it to your taste
  • 1 pound extra-lean ground beef (95% lean) Consider ground turkey or chicken for a leaner option
For the Base
  • 4 pieces flour tortillas (8 inches) Substitute with whole wheat or gluten-free tortillas if desired

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C) and prepare baking sheets by lightly greasing them.
  2. Combine drained tomatoes, onion, parsley, green pepper, tomato paste, mint, garlic, salt, paprika, cayenne, and black pepper in a large bowl. Mix well, then fold in ground beef.
  3. Arrange tortillas flat on greased baking sheets, allowing space for crisping.
  4. Spread about 1/4 cup of the meat mixture onto each tortilla, leaving a 1/2 inch border.
  5. Bake in the preheated oven for 9-12 minutes until meat is cooked and tortillas are golden brown.
  6. Remove from oven, allow to cool slightly, slice, and serve warm.
