Step-by-Step Instructions for Ground Turkey Sweet Potato Bake
- Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish with olive oil.
- In a large skillet over medium heat, add 2 tablespoons of olive oil and heat for a minute. Toss in the diced onion and sauté for about 3-4 minutes until soft and translucent.
- Add 1 pound of ground turkey to the skillet with the sautéed onions and cook for approximately 5-6 minutes until browned and no longer pink.
- Stir in 3 minced garlic cloves, 1 chopped red bell pepper, and 3-4 cups of diced sweet potatoes. Season with smoked paprika, ground cumin, dried thyme, salt, and pepper. Cook for 3-5 minutes.
- Transfer the mixture to your prepared baking dish, level it out, cover with aluminum foil, and bake for 25 minutes.
- After 25 minutes, remove the foil and sprinkle 1-2 cups of shredded cheese over the top. Return to the oven uncovered and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Once out of the oven, let it sit for a couple of minutes before serving. Garnish with freshly chopped parsley or cilantro.

Notes
Allow the mixture to cool before transferring to the baking dish if preparing ahead. Cut sweet potatoes into even pieces for uniform cooking.
