Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and have a large baking dish ready.
  2. In a medium bowl, combine olive oil, minced garlic, dried Italian herbs, salt, and pepper. Rub the mixture onto both sides of the chicken.
  3. Heat a skillet over medium-high heat and add olive oil. Sear the chicken for about 4 minutes on each side until golden brown.
  4. Transfer the seared chicken to the baking dish and bake for approximately 20 minutes until the internal temperature reaches 165°F (75°C).
  5. While the chicken bakes, boil salted water and add the russet potatoes. Cook for 15-20 minutes until fork-tender, then mash with butter and milk until smooth.
  6. In another pan, melt a tablespoon of butter over medium heat. Add the sliced carrots and sauté for about 5 minutes. Drizzle in honey and cook for an additional 5 minutes until tender.
  7. Allow the chicken to rest for a few minutes before slicing. Serve alongside the creamy mashed potatoes and glazed carrots, garnished with fresh parsley.
