Cooking Steps
  1. Start by placing the quartered sweet onions at the bottom of your crockpot.
  2. Layer the corned beef on top of the onions, including the spice packet.
  3. Add the halved carrots and small red potatoes.
  4. Pour the beer and enough water to cover the corned beef.
  5. Cover the crockpot and cook on low for 9 hours.
  6. Add the cabbage on top of the corned beef and vegetables and cook on high for 1 to 1.5 hours.
  7. Remove the lid, let cool slightly, and slice the corned beef against the grain.
  8. Serve alongside the vibrant vegetables.
