  1. Brown the Beef: Heat olive oil in a skillet over medium-high heat. Add ground beef, brown for about 3 minutes undisturbed, then stir and cook until fully cooked, about 2-3 minutes more.
  2. Sauté the Aromatics: Push beef to the edges, add diced onion, and sauté until translucent (about 3 minutes). Stir in minced garlic, smoked paprika, and dried oregano; cook for another minute.
  3. Deglaze the Skillet: Pour in beef broth, scraping browned bits with a wooden spoon, simmer for about 2 minutes to reduce.
  4. Add the Vegetables and Rice: Stir in mixed peas and carrots and pre-cooked rice; mix well. Simmer for 5 minutes to heat through.
  5. Finish with Cheese: Remove skillet from heat, sprinkle with cheddar cheese, cover for 1-2 minutes to melt.
