- Preheat your oven to 425°F (220°C).
- Lightly grease a baking sheet with olive oil or line it with parchment paper.
- Place the flatbreads on the prepared baking sheet and lightly coat the top with olive oil.
- Sprinkle mozzarella and cheddar cheese evenly across each flatbread.
- Add chopped fresh greens over the cheese, followed by cooked bacon.
- Carefully crack 2 eggs onto each flatbread and season with salt and black pepper.
- Bake for 10-12 minutes until edges are golden brown and egg whites are set.
- Let cool for a couple of minutes and garnish with sour cream or yogurt and fresh herbs.
