Method
 

Step‑by‑Step Instructions
  1. Preheat oven to 350°F (175°C) and prepare 9-inch cake pans with butter and flour.
  2. Sift flour, baking powder, baking soda, and salt in a bowl. Cream together butter and sugar, then add eggs and mix.
  3. Divide batter into pans and bake for 25-30 minutes until done. Cool in pans for 10 minutes before transferring to a rack.
  4. Bloom gelatin in water. Whisk eggs and sugar, heat milk, then combine with egg mixture until thickened, then add gelatin and cool.
  5. Whip heavy cream and fold into cooled custard mixture.
  6. Heat cream and pour over chopped chocolate, let sit then stir until smooth.
  7. Layer one cake with Bavarian cream, add the second layer and cover with remaining cream and ganache.
  8. Chill the assembled cake for at least one hour before serving.
