Method
 

Step-by-Step Instructions
  1. Remove the stems and seeds from the dried guajillo and ancho chiles. Soak them in hot water for 15 minutes.
  2. Blend the soaked chiles, garlic, onion, cumin, oregano, and 1 cup of beef broth until smooth.
  3. Heat a tablespoon of oil in a pot and sear the beef for 4-5 minutes on each side.
  4. Pour the blended sauce over the beef, add remaining broth, cover, and braise in a preheated oven at 300°F for 3 hours.
  5. Shred the beef into bite-sized pieces and return to the pot, stirring to absorb sauce.
  6. Warm tortillas in a skillet for 30 seconds each side, add beef and cheese, fold, and fry until crispy.
  7. Serve hot with consomé for dipping and garnish with onions, cilantro, and lime wedges.
