  • 3 tablespoons Fish Sauce Can substitute with soy sauce for vegetarian option.
  • 2 tablespoons Soy Sauce Use tamari for gluten-free.
  • 2 tablespoons Honey Maple syrup for vegan option.
  • 2 stalks Lemongrass Only the white part is used.
  • 3 cloves Garlic Minced.
  • 1 medium Shallot Finely chopped, can substitute with red onion.
  • 2 tablespoons Lime Juice
  • 1 teaspoon Ground Black Pepper
  • 2 tablespoons Vegetable Oil For grilling.
For Garnish and Serving
  • 1/4 cup Fresh Cilantro For topping.
  • 2 pieces Lime Wedges For serving.

Method
 

Marinade Preparation
  1. In a large bowl, combine fish sauce, soy sauce, honey, minced lemongrass, minced garlic, finely chopped shallot, lime juice, and ground black pepper. Whisk until smooth.
  2. Add the boneless, skinless chicken thighs, ensuring each piece is coated. Cover and refrigerate for at least 1 hour, preferably overnight.
Grilling Process
  1. Preheat your grill to medium-high heat, about 15 minutes prior to grilling.
  2. Remove the chicken from the marinade and let it rest at room temperature for 10 minutes before grilling.
  3. Grill the chicken for 4-5 minutes per side until a nice char forms and the internal temperature reaches 165°F (74°C).
  4. Let the chicken rest for 5 minutes after grilling to allow juices to redistribute.
  5. Garnish with fresh cilantro and serve with lime wedges.
