  • 1 teaspoon Garlic Powder Fresh minced garlic can be used instead.
  • 2 tablespoons Scallions Chives or yellow onions are good substitutes.
  • 1 teaspoon Salt
  • 1/2 teaspoon Fresh Ground Pepper
For the Topping
  • 4 large Eggs Cooked sausage or sautéed veggies can replace the eggs.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and clean the Portabella mushrooms.
  2. Mix breadcrumbs, shredded Manchego cheese, garlic powder, chopped scallions, melted butter, and milk in a bowl until moistened.
  3. Drizzle olive oil over the mushroom caps, season with salt and pepper, and place on a baking sheet.
  4. Fill each mushroom cap with the breadcrumb mixture, creating a well for the egg.
  5. Bake stuffed mushrooms for about 10 minutes until slightly toasted.
  6. Crack an egg into the well of each mushroom and season.
  7. Return to the oven and bake for an additional 10-15 minutes until the eggs are cooked to your liking.
