- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, sugar, and salt.
- Grate cold butter into the flour mixture and mix until coarse crumbs form.
- Fold in scallions, parsley, thyme, and rosemary until evenly distributed.
- Add ricotta and milk to the bowl and mix until just combined.
- Turn the dough out onto a floured surface and knead lightly 2-3 times.
- Pat the dough into a 9-inch rectangle about ¾-inch thick.
- Cut the rectangle into 12 squares or triangles and place on the baking sheet.
- Whisk together the egg and brush it lightly on top of the scones.
