  • 2 cups Sweet Cherry Tomatoes can substitute with grape tomatoes
  • 1 tablespoon Olive Oil use any mild-flavored oil if needed
  • 2 cloves Minced Garlic adjust quantity based on preference
  • to taste Salt use kosher salt for best results
  • to taste Black Pepper
For the Ricotta Spread
  • 1 cup Ricotta Cheese substitute with cream cheese or goat cheese for a different taste
  • 1 tablespoon Minced Garlic can replace with parsley or omit if desired
  • to taste Salt
  • to taste Black Pepper
For the Bread
  • 1 loaf Crusty Bread choose rustic Italian or French bread and avoid soft sandwich loaves
  • 1 tablespoon Balsamic Glaze store-bought is fine, homemade is simple using balsamic vinegar and honey

Method
 

Preparation Steps
  1. Preheat your oven to 400ºF (200ºC).
  2. In a baking dish, combine sweet cherry tomatoes, olive oil, minced garlic, salt, and black pepper. Toss gently, then roast in the oven for 20 minutes.
  3. In a mixing bowl, add ricotta, minced garlic, olive oil, salt, and pepper. Blend until smooth. Cover and refrigerate.
  4. Slice crusty bread into thick pieces. Mix olive oil, minced garlic, salt, and pepper. Brush mixture on each slice.
  5. Arrange the bread on a baking sheet and bake for 10-12 minutes until golden brown.
  6. Spread the ricotta mixture on each toasted slice, top with roasted tomatoes.
  7. Garnish with fresh basil leaves and drizzle with balsamic glaze before serving.
