For the Cream Mixture
  • 8 oz Mascarpone Cheese Feel free to substitute with cream cheese for a lighter option.
  • 1 cup Heavy Cream Coconut cream is a great dairy-free alternative.
  • 1/2 cup Powdered Sugar For a natural option, try honey or maple syrup.
  • 1 tsp Vanilla Extract Use pure vanilla for the best taste.
For the Layers
  • 24 pieces Ladyfingers You can replace them with sponge cake or gluten-free cookies.
  • 2 cups Fresh Raspberries Frozen raspberries can be used, but may alter the texture.
  • 1 cup Coffee or Espresso Offers traditional tiramisu flavor; can be omitted for a caffeine-free version.

Equipment

  • mixing bowl
  • Electric mixer
  • shallow dish
  • rectangular serving dish

Method

Step-by-Step Instructions for Raspberry Tiramisu
  1. In a large mixing bowl, beat together the mascarpone cheese and powdered sugar until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the mascarpone mixture.
  2. Pour brewed coffee into a shallow dish and allow it to cool. Quickly dip each ladyfinger into the coffee and arrange them in a single layer in a rectangular serving dish. Spread half of the whipped mascarpone mixture over the ladyfingers.
  3. Lay half of the fresh raspberries over the mascarpone layer and gently press them into the cream mixture.
  4. Repeat the process by layering the remaining ladyfingers in coffee on top of the raspberries and then spread the rest of the mascarpone mixture over the ladyfingers. Finish with a layer of the remaining raspberries.
  5. Cover the assembled tiramisu and refrigerate for at least 2 hours before serving. Garnish with additional raspberries and a dusting of powdered sugar.
