  • 1/4 cup Black Beans Rinsed and drained; pinto beans can be substituted
  • 1/4 cup Corn Fresh or thawed frozen corn works
For Melty Goodness
  • 1/4 cup Cheddar Cheese Shredded
For Freshness
  • 1 scoop Salsa or Pico de Gallo Choose your spice level
  • 1 tablespoon Fresh Cilantro Chopped; parsley can be used as an alternative
  • 1 wedge Lime Optional for added brightness

Method
 

Step-by-Step Instructions
  1. In a medium saucepan, bring water to a boil. Add 1 cup of white rice, reduce heat, cover, and simmer for 15-20 minutes until rice is tender.
  2. In a large skillet over medium-high heat, brown 1 pound of ground beef for 5-7 minutes. Drain excess fat.
  3. Sprinkle taco seasoning and pour in 1/2 cup of water. Stir well and let it simmer for 3-5 minutes until flavors meld.
  4. Prepare toppings by rinsing and draining 1/4 cup each of black beans and corn; optionally warm them in the microwave for 30-60 seconds.
  5. Assemble bowls starting with rice, adding seasoned beef, black beans, corn, shredded cheddar, salsa, and garnishing with cilantro.
