- Start by slicing the zucchini into thin ribbons using a vegetable peeler or mandoline for even texture. Cut the onion into strips for a sweet, caramelized flavor. Gather all your ingredients and equipment.
- Place your wok or skillet over high heat and let it get very hot, about 2-3 minutes. Add 1-2 tablespoons of oil and swirl it around.
- Once the oil is shimmering, add the sliced onions to the hot pan. Stir-fry them for 2-3 minutes until golden and soft.
- Quickly add the zucchini ribbons to the pan. Stir-fry for another 2-3 minutes, allowing the zucchini to soften slightly.
