Step-by-Step Instructions
  1. Start by slicing the zucchini into thin ribbons using a vegetable peeler or mandoline for even texture. Cut the onion into strips for a sweet, caramelized flavor. Gather all your ingredients and equipment.
  2. Place your wok or skillet over high heat and let it get very hot, about 2-3 minutes. Add 1-2 tablespoons of oil and swirl it around.
  3. Once the oil is shimmering, add the sliced onions to the hot pan. Stir-fry them for 2-3 minutes until golden and soft.
  4. Quickly add the zucchini ribbons to the pan. Stir-fry for another 2-3 minutes, allowing the zucchini to soften slightly.
  5. Pour in the soy sauce and toss the stir-fry to coat the zucchini and onions, cooking for 1-2 minutes.
  6. Remove the pan from heat, and serve hot. Sprinkle toasted sesame seeds over the top.
