  • 1 tablespoon Ginger Grated.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a large sheet pan lined with parchment paper.
  2. In a mixing bowl, whisk together soy sauce, honey, rice vinegar, toasted sesame oil, minced garlic, and grated ginger.
  3. Add your chicken pieces to the bowl with the marinade, tossing until fully coated.
  4. Arrange the marinated chicken evenly on the sheet pan, and scatter bell peppers and red onion around it.
  5. Drizzle the remaining marinade over everything and season with salt and pepper.
  6. Bake for 20 minutes without opening the oven door.
  7. Gently stir chicken and vegetables, then sprinkle cashews over the mixture.
  8. Bake for an additional 10-15 minutes until chicken reaches an internal temperature of 165°F (74°C).
  9. Let the dish rest for 5 minutes before serving.
