Step-by-Step Instructions
  1. Preheat your oven to 200°C (400°F). Pat the chicken thighs dry and season with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat and brown the chicken thighs skin-side down for 6-8 minutes.
  3. In a saucepan, combine chopped plums, soy sauce, rice vinegar, honey, garlic, and ginger. Simmer for 5-7 minutes.
  4. Flip the chicken thighs in the skillet, pour the plum sauce over them, and ensure they're well-coated.
  5. Transfer the skillet to the oven and roast the chicken for 25-30 minutes until crispy and cooked through.
  6. Let the chicken rest for 5 minutes before serving. Drizzle with sesame oil and garnish with spring onions and sesame seeds.
