Step-by-Step Instructions
  1. Preheat oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a bowl, whisk light brown sugar, soy sauce, rice vinegar, minced garlic, and ginger until smooth.
  3. Pat salmon fillets dry, drizzle with olive oil, then season with salt and black pepper.
  4. Place salmon skin-side down in the greased dish and pour two-thirds of the glaze over it.
  5. Scatter diced pineapple around the salmon.
  6. Bake for about 12-15 minutes until salmon flakes easily with a fork.
  7. Broil for 1-2 minutes for additional caramelization if desired.
  8. Let the salmon rest for about 5 minutes and garnish with fresh parsley before serving.
