Baking Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners or cooking spray.
- In a large mixing bowl, combine 1 cup of creamy peanut butter, 3 mashed ripe bananas, ¾ cup of sugar, 2 beaten eggs, and 1 teaspoon of vanilla extract. Mix until smooth.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt.
- Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
- Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes until golden brown and a toothpick inserted comes out clean. Allow cooling for 5 minutes in the tin before transferring to a wire rack.
- Serve warm or store in an airtight container for up to 3-5 days.
