Baking Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners or cooking spray.
  2. In a large mixing bowl, combine 1 cup of creamy peanut butter, 3 mashed ripe bananas, ¾ cup of sugar, 2 beaten eggs, and 1 teaspoon of vanilla extract. Mix until smooth.
  3. In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, and ½ teaspoon of salt.
  4. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  5. Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 18-20 minutes until golden brown and a toothpick inserted comes out clean. Allow cooling for 5 minutes in the tin before transferring to a wire rack.
