Ingredients
  

For the Batter
  • 2 cups blanched almond flour Can use other gluten-free flours, but may need to adjust liquid content.
  • 1/2 cup coconut flour Replace with tapioca flour (note: reduce the amount).
  • 1/4 cup coconut sugar Brown sugar or maple sugar can also work.
  • 1 tbsp baking powder Ensure it's fresh for best results.
  • 1 tsp baking soda
  • 2 tsp cinnamon Could substitute with nutmeg for a different spice profile.
  • 1/2 tsp salt
  • 1/2 cup unsweetened coconut flakes Flaxseed meal for a different texture.
  • 1/3 cup coconut oil (melted) Could use olive oil or melted butter as alternatives.
  • 1/3 cup maple syrup Honey or agave syrup are options.
  • 3 large eggs Flax eggs for a vegan version.
For the Filler
  • 1 cup shredded or grated carrots Zucchini could be used for a different base.
  • 1 cup finely diced apples Pears could work for a similar texture.
  • 1/2 cup raisins Dried cranberries or chopped dates.
  • 1/2 cup chopped walnuts Pecans or omit for nut-free.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with coconut oil or cooking spray.
  2. In a large mixing bowl, combine the blanched almond flour, coconut flour, coconut sugar, baking powder, baking soda, cinnamon, salt, and unsweetened coconut flakes. Whisk until no clumps remain.
  3. In a separate bowl, whisk together the eggs, melted coconut oil, and maple syrup until well blended.
  4. Fold the grated carrots and finely diced apples into the wet mixture gently.
  5. Pour the wet mixture into the bowl with the dry ingredients, fold until no dry pockets remain. Fold in the raisins and chopped walnuts.
  6. Pour the thick batter into your prepared loaf pan, smoothing the top.
  7. Place the loaf pan in the preheated oven and bake for 45-48 minutes, until golden brown. A toothpick inserted should come out clean or with few crumbs.
  8. Remove from the oven and let cool in the pan for at least 15 minutes before transferring to a cooling rack.

Notes
