- Cook sausage in a skillet over medium heat for 5-7 minutes until browned. Drain fat and sprinkle sausage over croissant pieces.
- Whisk together eggs, milk, salt, and pepper in a large bowl until smooth.
- Pour egg mixture over croissants and sausage, pressing down gently to soak. Cover tightly and refrigerate overnight.
- Uncover and bake at 350°F (175°C) for 30-45 minutes until puffed and golden. Check with a toothpick for doneness.
