Preparation Steps
- Preheat your oven to 425°F (220°C).
- Generously salt the whole chicken, coating outside and inside.
- Mix softened butter, minced garlic, and Creole seasoning.
- Rub garlic butter mixture beneath the chicken skin and in the cavity.
- Stuff lemon halves and fresh rosemary inside chicken cavity.
- Toss baby potatoes, fresh carrots, and other veggies with olive oil, salt, pepper, and Creole seasoning.
- Arrange the vegetables in a roasting pan, laying the chicken on top.
- Roast for about 1 hour and 30 minutes, basting every 30 minutes.
- Check for doneness with a meat thermometer, looking for 165°F (75°C).
- Rest the chicken for 10-15 minutes before carving and serve with vegetables.
