Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. Generously salt the whole chicken, coating outside and inside.
  3. Mix softened butter, minced garlic, and Creole seasoning.
  4. Rub garlic butter mixture beneath the chicken skin and in the cavity.
  5. Stuff lemon halves and fresh rosemary inside chicken cavity.
  6. Toss baby potatoes, fresh carrots, and other veggies with olive oil, salt, pepper, and Creole seasoning.
  7. Arrange the vegetables in a roasting pan, laying the chicken on top.
  8. Roast for about 1 hour and 30 minutes, basting every 30 minutes.
  9. Check for doneness with a meat thermometer, looking for 165°F (75°C).
  10. Rest the chicken for 10-15 minutes before carving and serve with vegetables.
