Preparation Steps
- Heat 2 tablespoons of olive oil in a large pot over medium heat for about 2 minutes.
- Add 1 pound of ground beef, breaking it apart and cooking for about 5 minutes until fully cooked.
- Introduce 1 medium diced onion, 2 cloves minced garlic, and 1 diced bell pepper, sautéing for 3-4 minutes.
- Stir in 1 can diced tomatoes, 2 cups beef broth, 2 cups elbow macaroni, 1 tablespoon paprika, 1 teaspoon dried oregano, 1 teaspoon salt, and ½ teaspoon black pepper.
- Bring to a boil, then reduce heat to low and let it simmer for 15 minutes.
- If desired, stir in 1 cup of shredded cheddar cheese until melted.
- Remove from heat and let rest for 5 minutes. Garnish with fresh parsley before serving.
