  • 2 cups Beef Broth Vegetable broth can be used.
  • 2 cups Elbow Macaroni Substitute with whole wheat pasta for a healthier choice.
For Seasoning & Garnish
  • 1 tablespoon Paprika Adjust based on heat preference.
  • 1 teaspoon Dried Oregano Alternative herbs work well.
  • 1 teaspoon Salt Adjust to taste.
  • ½ teaspoon Black Pepper Essential seasoning.
  • 1 cup Shredded Cheddar Cheese Optional; can swap for a dairy-free option.
  • Fresh Parsley For garnish, optional.

Method
 

Preparation Steps
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat for about 2 minutes.
  2. Add 1 pound of ground beef, breaking it apart and cooking for about 5 minutes until fully cooked.
  3. Introduce 1 medium diced onion, 2 cloves minced garlic, and 1 diced bell pepper, sautéing for 3-4 minutes.
  4. Stir in 1 can diced tomatoes, 2 cups beef broth, 2 cups elbow macaroni, 1 tablespoon paprika, 1 teaspoon dried oregano, 1 teaspoon salt, and ½ teaspoon black pepper.
  5. Bring to a boil, then reduce heat to low and let it simmer for 15 minutes.
  6. If desired, stir in 1 cup of shredded cheddar cheese until melted.
  7. Remove from heat and let rest for 5 minutes. Garnish with fresh parsley before serving.
