  • 1 lb Ground Beef or Turkey or ground chicken or plant-based option
  • 1 medium Onion yellow or red
  • 1 cup Quinoa rinsed
  • 1 can Black Beans drained and rinsed
  • 1 packet Taco Seasoning or homemade
  • 1 can Ro-Tel Tomatoes with Chilies or any diced tomatoes
  • 1 cup Corn canned
  • 1 medium Bell Pepper any variety
  • 1 cup Shredded Cheese cheddar or Monterey Jack
  • 2 cups Low Sodium Chicken Broth or vegetable broth
  • 2 tbsp Chipotle Peppers in Adobo Sauce optional
For Toppings
  • 1 medium Avocado sliced
  • 0.5 cup Cilantro chopped
  • 1 cup Salsa to taste
  • 0.5 cup Greek Yogurt or Sour Cream optional
  • to taste Hot Sauces
  • 0.5 cup Olives sliced

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook the ground meat and minced onion until browned, about 5–7 minutes. Drain excess fat, stir in taco seasoning and chipotle peppers for 2 minutes.
  3. In a casserole dish, layer uncooked quinoa, followed by meat mixture, bell peppers, black beans, tomatoes, and corn. Pour broth over layers to submerge quinoa.
  4. Cover tightly with foil and bake for about 40 minutes until quinoa is tender. Remove foil and check for bubbling.
  5. Sprinkle cheese over the top and bake uncovered for an additional 10 minutes or until cheese is melted. Broil for 2 minutes for a crispy finish.
  6. Let it rest for 5–10 minutes before serving.
  7. Serve topped with avocado, cilantro, salsa, and yogurt.
